Spanish Salsify

A perennial sap-green plant with a thick vertical root, the root is black on the outside, and white on the inside. The plant is grown as a vegetable cultivar for human consumption (and then is also known as Black Salsify, or Oyster Plant). It grows on thermophilic grassland and forest edges (especially stands of thermophilic oaks). It flowers from May to June.
